Many Americans suffer from hunger, while others struggle to find healthy foods. What do communities do to address this problem, and what should they do? Good Food and Strong Communities share ideas and stories about efforts to improve food security in large urban areas in the United States by strengthening community food systems. It builds on five years of collaboration between a research team from the University of Wisconsin, Growing Power, the Michael Fields Agricultural Institute and more than 30 organizations on the front lines of this work in Boston, Chicago, Detroit, Milwaukee, and Minnesota.

Los Angeles, Madison and Cedar Rapids. Here, activists and researchers are talking about what work is and still needs to be done to ensure that everyone has access to readily available, affordable, appropriate and acceptable food.

The approach begins with the development of basic principles of food security and food justice in light of the diversity of diet practices and innovations in American cities. Contributing authors address access to land for urban agriculture, discussions on agriculture in the city, new possibilities for food processing, and health food marketing.

They have put these basic elements - land, production, processing and marketing - in the context of municipal politics, education, food justice and sovereignty, especially for colored people. While a product-to-consumer product path may seem obvious on the surface, the obvious simplicity hides the complex logistical and value-laden factors that create and maintain a diet.

This book helps readers understand how a diet works and how individual and community initiatives can reduce the problems associated with an industrial diet.
